How vegetable oils, a dietary staple, were produced and used in Ptolemaic Egypt is considered in this volume. The Ptolemaic revenue laws and the Zenon archive provide a substantial amount of the information, and this is supplemented with literary sources and studies of oil production in premodern societies.
